Care and maintenance for your grill, what we want to do is moisturize your grill as much as possible. Even though you have heliarch welding construction. Always get a cleaner with a moisturizer in it and wipe with the grain, very important. Don't wipe against the grain because you'll have dirt build up and you'll scratch your stainless steel.
The other thing I want you to be cognizant of is all of this comes out. You can lift the trays out, and these trays are dishwasher safe. Also can take these ceramics, a lot of people clean them, some don't, it depends on how well flavored you want your grill, because all the sauce and everything evaporates and gets reabsorbed in the food. Occasionally you may want to clean them, you can soak them you can wash them. Very, very important, do not put them back in the grill right away. Always let them sit out for a couple of days because they are ceramic, they'll expand and they'll break.
The other part to this, because you have your traditional burner, is your sear zone burner. Your sear zone burner is a ceramic burner. If it gets wet turn if off immediately because it will expand and break. The other part about it is your grate. Your going to have particles that go down even though you have what's called a vented grate which catches the juices, and gets reabsorbed in to your chicken, steak, fish, whatever you have. You always want to clean this off periodically, what a lot of people do is they'll go to Home Depot, they'll go to Walmart, they'll get an inexpensive vacuum cleaner and then what we'll do is we'll just vacuum it up dry.
Always try, always, always, always try to clean your grill dry. What I mean by that is don't introduce any water because water and the residuals will create grease and it creates a grease mess for you. The other thing that you can do periodically is take this, turn it upside down, turn the burner on and it'll burn off the debris. It's the self cleaning oven technique. Very nice, easy to do.
There is a pull out pan that comes all the way out. what you want to do here is put down some tin foil, don't put it on the rim here because it will get caught up in your pulley.
Your igniters, you have 2 different igniters, one for each side. Very simple, twist it out, AA battery in there, put it back in. Real easy to deal with.
You do want to clean your knobs and everything with a stainless cleaner, like I want to come back and clean this here, looks like it's got some build up here of some of our stuff.
Right now the grill is packed in vegetable oils to keep it moist, we'll burn it off for ten minutes before we use it.
Regarding hurricanes, what you want to do is remove the springs like I did, put it down, take a bungee cord and bungee it to this area. The other thing you want to do is tape the doors closed. A tremendous amount of pressure comes through and the pressure will blow out the doors, blow them open and allow a lot of wind and stuff in so I do it to all the seams around here.
Your double burner. This is the best, I love this, it's all dishwasher safe. All of these come out, it's a bit hot because we just tested it. This lifts off, you can wipe it down entirely any time you want. It works just like a double burner. You've got 34,000 BTUs out here between the two 14,000 BTU burners. Same thing with the moisturizer, moisturize it periodically. If you find you need more moisturizer, a great trick is WD-40, the main component is fish oil. It will moisturize everything really, really well and keep this thing clean.
When you say the grain, which way is the grain?
The grain is like a wood, it's this way. It's always left to right. Same with here, left to right.
This has a really interesting feature, this is your smoker box. I love this thing. It has a stand alone smoker burner, it's on right now. Why is that important? Because you can cold smoke with this. You can also take your wood chips and soak them for about an hour, put them in here. I like bourbon flavored wood chips, I'll put Jack Daniel's over this. Just don't fill the tray up, put you can get it pretty moist. Make sure, you see this is not sitting right, it's has to sit right on the runners.
